The cake that almost never made it: The story of Artcaffé’s Salted Caramel

Before it became one of Artcaffé’s favourite treats, the Salted Caramel Cake almost didn’t see the light of day.

In the late 2010s, Chef Jyoti Patel, Artcaffé Group’s Chief Culinary Officer and Head of Culinary, travelled to London, where sweet-and-salty combinations were gaining popularity. Inspired by the trend, she returned to Kenya with an idea for a cake that balanced rich caramel with a hint of salt.

She developed samples, but they were not approved at first.

Chef Jyoti believed the idea deserved a fair chance. If the cake was going to fail, she wanted the customers to decide. So, she persisted and let them taste it.

Their answer was clear: they loved it.

From an idea to a Kenyan Favourite

The cake brought together familiar flavours, vanilla, chocolate and caramel, in a way many Kenyan diners had not experienced before.

As more guests discovered it, salted caramel became more than an international food trend. It found a place in Kenya’s café culture through birthdays, work breaks, coffee dates, family lunches and everyday celebrations.

Today Salted Caramel Cake is the most popular Artcaffe’ cake, the absolute bestseller with more than 20.000 Whole Cakes sold every year. Its success reflects the curiosity of Kenyan diners and their willingness to embrace global flavours when they are made familiar and accessible.

The magic is in the way it’s made

The Artcaffé Salted Caramel Cake also carries a story of thoughtful baking.

Layers of vanilla and chocolate cake are generously spread with salted caramel sauce, then finished with beautifully piped chocolate for an elegant final touch.

Most importantly, in the ArtBakery nothing goes to waste. Every layer and every ingredient is carefully weighed and re-utilized at best possible. It’s a simple example of waste-conscious baking: looking at what is already available and finding a creative way to make something memorable from it.

This approach reflects Chef Jyoti’s belief that sustainability should be part of everyday food operations.

Giving Culinary Ideas Room to Grow

For young and aspiring chefs, this story is a reminder to remain curious and believe in their craft.

Great things often come out of trial and error. Believing in the vision is the real key to success.Chef Jyoti encourages emerging culinary talent to experiment, learn from feedback and stay close to the work. Technical skills can be taught, but curiosity, resilience and the courage to keep refining an idea are what turn inspiration into impact.

More Than a Cake

Thousands of Artcaffé Salted Caramel Cake slices and whole cakes have since become part of birthdays, graduations, milestones and spontaneous catch-ups across Kenya.
